How long does it keep after opening?
Best within 3 months once opened, store in a cool, dark spot away from heat and light. Refrigeration isn’t necessary and can cause the oil to cloud (it clears at room temperature).
Can I cook with it at high heat?
Extra virgin olive oil has a smoke point around 190 to 215°C, so light sautéing and oven roasting are fine. For deep frying or high-heat searing, use a refined olive oil or another high-smoke-point oil, and save this one for finishing.
